2 tsps sugar
¼ cup Red wine vinegar
½ cup extra virgin olive oil
2 cups boiling potatoes (cooked, cooled and diced)
15 ozs canned red Kidney beans (drained and rinsed)
15 ozs canned chickpeas (drained and rinsed)
15 ozs canned, yellow wax beans (drained, cut in half)
1 shallot (finely chopped)
2 Tbsps chopped scallions
kosher salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

In a bowl, combine mustard, sugar and vinegar. Whisk in olive oil. Add potatoes, kidney beans, garbanzo beans, wax beans, shallot and scallions to the bowl and toss to coat salad evenly with dressing. Season with salt and pepper and serve.
