- ⅓ cup brown sugar
- ⅞ cup Apple juice
- 1 ⅔ cups dry white wine
- 1 lemon (juice)
- ½ stick cinnamon
- 4 Pear (peeled and cored, keeping the stalk)
- 14 ozs Goat cheese (triangle)
- Honeycomb

Preparation steps
1.
In a pan, lightly caramelise the sugar. Stir in the juice and wine. Add the lemon juice and cinnamon and bring to the boil.
2.
Place the pears in the poaching liquid. Bring to the boil, remove from the heat, cover and leave to cool completely. Take the pears out of the pan and drain well.
3.
Cut the cheese into 4 wedges and arrange on plates with the pears. Drizzle a little honey from the honeycomb over the pears, put the honeycomb on the plate if desired, and serve.
