Sweet Pears with Soft Cheese
ready in 45 min.
- 2 cups white wine
- ⅞ cup Pear juice
- 1 unwaxed lemon (juice)
- 6 Tbsps honey
- 1 stick cinnamon
- 1 Vanilla bean (split)
- 4 Pear (e. g. Williams Christ, peeled)
- unpasteurised Goat cheese (e. g. Valençay or Selles-sur-Cher, 4 wedges)
- 4 Tbsps Honeycomb

Bring the wine to the boil with the pear juice, lemon juice, 2 tbsp honey, cinnamon and vanilla pod and simmer gently for around 10 minutes.
Place the pears in the stock, cover and poach for 8-10 minutes over a moderate heat, then turn the heat off and leave to cool in the liquid.
Put the pears on dessert plates and drizzle with the remaining honey. Add a wedge of cheese and 1 tbsp of comb honey to each plate.
