- 2 unwaxed Limes (zest grated, filleted, juice retained)
- 1.333 cups Ricotta cheese
- 2 tablespoons runny honey
- 12 frozen Spring roll dough sheet (defrosted)
- 2 ½ cups soybean oil
- powdered sugar
Preparation steps
1.
Chop the lime fillets and mix with the ricotta, lime zest, juice and honey.
2.
Place a little of the filling in the middle of each pastry sheet. Fold over one corner and the sides and roll up.
3.
Fry the spring rolls in hot (170°C | 340F) oil for 3-4 min until golden. Pat dry with kitchen paper and serve dusted with icing sugar.
