For the pastry
1 ¾ cups gluten-free all purpose flour (plus extra for dusting)
1 pinch salt
0.333 cup dairy-free margarine
3 Tbsps water
For the filling
1 ¼ cups Almond milk
cup Rice flour
0.333 cup dairy-free margarine
¼ cup coconut sugar
2 eggs
1 unwaxed lemon (finely grated zest)
½ tsp grated Nutmeg
0.333 cup raisins
1 Tbsp chopped Candied fruit (optional)
½ cup chopped almonds

Preparation steps

1.
Grease a 20cm|8" pie dish or tin.

For the pastry: sift the flour into a mixing bowl and stir in the salt. Rub in the butter until the mixture resembles breadcrumbs. Gradually add the water mixing continuously until the mixture just comes together as a dough.

Roll out the dough on a lightly floured surface and line the dish. Prick the base and chill for 20 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4.

Bake the pastry case for about 15 minutes until cooked, but not brown. Set aside to cool.

For the filling: put the milk and ground rice into a pan and bring to a boil, stirring constantly until the rice thickens. Set aside to cool.
7.
Beat together the margarine and sugar until fluffy. Beat in the eggs, then add the lemon zest, raisins, candied peel (if using) almonds, nutmeg and rice mixture.
8.
Pour into the pastry case and bake for 20-30 minutes until the top is golden.
