8 ozs canned Apricot (drained)
8 ozs Greek yogurt
1 Tbsp sugar (optional)
5 ozs Dark chocolate (70% cocoa solids)
½ cup chopped, roasted almonds

Preparation steps

1.
Blend the apricots in a food processor until smooth and transfer to a bowl.
2.
Stir in the yoghurt and sweeten to taste if needed.
3.
Fill 4-6 ice lolly moulds with the mixture and freeze for 1 hour. Insert the sticks and freeze for a further 7-9 hours until solid.
4.
Melt the chocolate and in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and leave to cool to room temperature, stirring occasionally.
5.
Unmould the lollies, dip them into the chocolate and sprinkle with the chopped almonds. Return to the freezer again to fully set.
