- 4 Tbsps caster sugar
- 2 small lemons (pared rind and juice)
- ⅜ cup water
- 1 Basil
- 3 cups white wine
- ⅔ cup Peach schnapps
- 3 ½ cups Soda water
- Ice
- 2 Peaches (skinned and sliced)

Preparation steps
1.
Heat the sugar, lemon rind, water and basil stalks in a pan over a low heat, until the sugar has dissolved completely. Set aside to cool.
2.
Remove the lemon rind and basil stalks and pour into a jug. Stir in the wine, lemon juice and schnapps.
3.
Add the soda water, plenty of ice, peach slices and basil leaves. Pour into glasses to serve.
