Citrus Fruit Cooler

- ⅔ cup Lime juice
- 2 Tbsps grated Lime zest
- ½ cup sugar
- 1 Vanilla bean (cut in half lengthways)
- 2 unwaxed Limes (sliced)
The same recipe can be used to make lemonade. Simply replace the limes with lemons.
Place the juice and zest in a bowl. Add 500 ml water and leave to steep overnight.
Place the sugar and the vanilla pod in a pot with 120 ml water and bring to the boil. Simmer for 5 min and leave to cool slightly.
Sieve the lime juice, add the syrup and mix well. Transfer to a bottle and chill.
Serve in glasses with ice cubes and lime slices.
