3 Red Bell pepper
3 yellow Bell pepper
6 garlic cloves
4 shallots
1 handful Basil
3 Tbsps olive oil
400 milliliters Chicken broth
salt
freshly ground peppers
4 Cod (skinless, about 150 grams)
2 Tbsps white balsamic vinegar
minced garlic cloves (for garnish)
fresh Basil (for garnish)

Preparation steps

Rinse and halve peppers, remove seeds and ribs, and cut into strips. Peel and chop garlic and shallots. Rinse basil and shake dry. Cut the leaves from one sprig into thin strips. Strip leaves from remaining sprigs.

Heat olive oil in a pan. Add half of the garlic and all of the shallots and cook until translucent. Add peppers and cook a few minutes more. Deglaze with chicken broth and bring to a boil. Cook about 10 minutes over low heat. Stir in basil leaves and season with salt and pepper.

Rinse cod fillets and place side by side in a steamer insert. Sprinkle with the remaining garlic and the basil strips. Place in a pot with a small amount of water. Bring to a boil. Cover and steam 12-15 minutes. Stir vinegar with pepper mixture, bring to a boil and divide among deep plates or bowls. Top with fish and garnish with garlic and basil.
