Preparation steps

Preheat the oven to 100°C (approximately 210°F). Place the various peppercorns and coriander in a mortar and coarsely crush. Mix in the rosemary and thyme and sprinkle the mixture into a shallow dish.

Rinse the beef steaks, pat dry and rubb with the seasoning mixture. In a large pan, fry the steaks in the hot oil on each side for 3-5 minutes, depending on the desired degree of doneness. Season with salt, wrap in aluminum foil and place in the preheated oven to rest for 8-10 minutes.

Remove and serve garnished with thyme.
