Spicy Green Papaya Salad
Rinse and peel the papaya, then halve and remove the seeds. Thinly shave the papaya into strips.
Cut the kaffir lime leaves lengthwise into very fine strips. Halve the chilies, and remove the seeds. Julienne the chilis lengthwise. Peel and slice the garlic.
Mix the fish sauce the the lime juice, lime zest, and sugar. Add the garlic. Mix the papaya with the sauce, then transfer to plates. Garnish with the chili and the lime leaves.
