Preparation steps

Wash and trim the spring onions and cut at an angle into thin rings. Halve the papayas, remove the seeds and cut into pieces or thin slices. Squeeze the orange and limes, mix the juice and season to taste with salt, pepper and honey. Then whisk in the oil. Cover and chill for about 1 hour.

Shortly before serving, peel and halve the avocados and remove the stones. Cut the flesh into pieces or thin slices and mix carefully with the papaya and the lime dressing. Arrange the salad on a shallow platter and scatter with spring onion rings and coriander leaves. Garnish with cashew nuts and serve immediately.
