Spicy Caribbean Prawns with Rice

1 ¾ cups natural Yogurt
2 tsps Curry powder
1 tsp cayenne pepper
1 onion (diced)
12 King prawn (deveined, and peeled with tails intact)
20 Scallop (removed from their shells, roe discarded)
4 potatoes (peeled and cubed)
2 Tbsps Nut oil
2 sprigs cilantro
salt

Preparation steps

1.
In a bowl mix the yoghurt with the curry powder, cayenne pepper, the diced onion and a large pinch of salt.
2.
Pour over the seafood and marinate for 30 minutes.
3.
Cook the potatoes in boiling, salted water until soft. Drain and reserve.
4.
Heat the oil in heavy based pan
5.
Drain the seafood, add to the pan and cook for 2 minutes stirring continuously.
6.
Add the marinade and potatoes and continue cooking for a further 10 minutes. Season to taste.
7.
Wash and dry the coriander, roughly chop reserving a few leaves for garnish.
8.
Stir in the chopped coriander and serve with boiled rice garnished with a coriander leaf.
