- 2 tsps English mustard powder
- 1 tsp dried Basil
- ½ tsp salt
- 1 tsp Onion salt
- 1 tsp Garlic salt
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp Black pepper
- 1 pinch cayenne pepper
- 14 ozs boneless Chicken breasts (thickly sliced)
- 14 ozs Prawn (peeled and deveined)
- 2 Tbsps Oil
- 1 onion (chopped)
- 2 bay leaves
- 1 ⅔ cups canned, chopped Tomatoes
- 2 Tbsps all-purpose flour
- 2 ½ cups fish stock
- 2 cups cooked Rice
- To garnish
- parsley
- freshly ground Black pepper

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Mix together the spices, salt and pepper.
3.
Sprinkle the chicken with 1 tablespoon of the mix and sprinkle the shrimp with another 1 tablespoon of the mix.

Heat the oil in a flameproof casserole dish and cook the onion until softened. Add the seasoned chicken and cook for 2 minutes. Add the bay leaves and tomatoes and the remaining spice mixture. Cook until most of the liquid is absorbed.
5.
Add the flour and stir until it is completely absorbed. Cook for 1 minute.
6.
Add the stock, stir well and bring to a boil.
7.
Add the seasoned prawns and rice. Cover and cook in the oven for about 15-20 minutes until the prawns are pink and plump.
8.
Garnish with parsley and black pepper.
