- ¼ cup butter
- 2 cloves garlic cloves (very finely chopped)
- 1 tsp ground ginger
- 2 tsps Curry powder
- ½ cup chicken stock
- 4 Tbsps cream (30% fat)
- 2 Tbsps vegetable oil
- 3 ⅓ cups Prawn (peeled)
- ½ lemon (juiced)
- 2 Tbsps chopped parsley
- Naan (to serve)

Preparation steps

Heat the butter in a saucepan and gently fry the garlic until soft but not brown.

Add the ginger and curry powder, cook for 2 minutes then add the chicken stock. Bring to a boil then simmer until reduced by about a half. Add the cream and simmer until the sauce is thick. Season with salt and freshly ground black pepper.

Heat the oil in a frying pan (skillet) and quickly fry the prawns until cooked through. Add the lemon juice, let bubble then place the prawns on serving plates and pour over the sauce.
4.
Scatter over the chopped parsley and serve with warmed naan breads and parsley to garnish.
