Ingredients

For the apricot chutney
1 red chili pepper (halved, seeds removed, finely chopped)
1 onion (roughly chopped)
2 ⅔ cups Apricot (peeled, halved, stones removed, cut into pieces)
1 untreated Lime (zest grated and juiced)
2 Tbsps honey
2 Tbsps apple cider vinegar
1 Tbsp soy sauce
1 tsp fresh ginger (grated)
cinnamon
1 pinch ground cilantro
For the turkey stir-fry
1 egg
4 Tbsps breadcrumbs
2 tsps Garam Masala
2.333 cups turkey breasts (cut into strips)
3 Tbsps Peanut oil
3 red peppers (cut into strips)
5 scallions (cut into thirds)

1 Sieve, 1 Cutting board, 1 Small knife, 1 Pot mit Deckel, 1 Measuring cups, 1 Bowl, 1 Teaspoon

Preparation steps

To make the chutney put the chilli pepper, onion and the apricots in a large pot. Add the lime zest and juice, the honey, vinegar, soy sauce, ginger, cinnamon and coriander and bring to a boil. Leave to simmer for approx. 30 minutes at a low temperature stirring occasionally. Let cool until lukewarm.

To make the turkey kebabs beat the egg and season with salt and pepper.

Mix the bread crumbs with the garam masala. Dunk the turkey strips in the egg mixture and then coat in breadcrumbs - make sure the breadcrumbs stick well.

Heat the oil in a high skillet and fry the turkey until golden brown. Add the pepper and spring onions and fry together for approx. 3 minutes.
5.
Season with salt and pepper and serve with the apricot chutney.
