Preparation steps

Finely grind the wheat berries, rye, coriander and fennel. Whisk in the eggs, water and salt until smooth. Rinse the leek, cut in half, trim and cut into rings Heat the oil in a large frying pan, sauté the leeks until softened, add the batter and cook for 2-3 minutes. Cut into pieces with spatula, turn and continue cooking until golden brown on both sides.
