100 grams Spelt flour
50 grams ground almonds
2 tsps dried thyme
1 heaping tsp salt
1 pinch sugar
1 tsp Chili powder
200 grams cold butter (cubed)
1 large egg

Preparation steps

Combine the bread flour, spelt flour, ground almonds, thyme, salt, sugar and chili powder in a large bowl. Add the egg and distribute the butter over the top. Mix everything together using a pastry cutter or two forks. Quickly knead with hands to form a smooth dough. Wrap with plastic wrap and refrigerate for 1 hour.

Roll the dough out onto a floured surface until about 3 mm (approximately 1/10 inch) thick. Cut into circles about 3-4 cm (approximately 1 - 1 1/2 inches) in diameter using a cookie cutter or drinking glass. Place the rounds onto a baking sheet lined with parchment paper and press a small thyme sprig onto the top of each round. Bake in an oven preheated to 170°C/150° convection (approximately 340°/300°F convection) for 15-20 minutes, until golden brown and crisp. Remove from the oven and allow to cool. Store the crackers in an airtight container.
