Shrimp contains iodine, a trace element that is not typically found in most diets. In this recipe, you can get your fill of iodione and lean protein from the shrimp.

You can also serve this with sweet chilli sauce on the side, which would pair well with the mango chutney.

1 egg white

12 King prawn raw (peeled and deveined)
2 Tbsps light soy sauce
Chili powder
Corn starch
0.333 cup Mango chutney (from a jar)
Chervil (to garnish)

Preparation steps

Brush the pastry squares with egg white and fold into triangles, pressing together firmly. Fry in hot oil (approx. 350F), in batches, for 2-3 minutes until crispy. Slide the triangles carefully into the hot fat and push below the surface carefully with a wooden spoon, so that the tips curve upwards. Hold each one in place until the shape sticks then fry until golden brown. Drain on kitchen paper and leave to cool.

Mix the prawns with the soy sauce and season with chile powder. Toss in corn starch and fry in batches in the hot oil for around 2 minutes. Drain on kitchen paper.

Spoon 1 tsp mango chutney onto each wonton and place a prawn on top. Serve garnished with chervil.
