1 handful Spinach
1 Tbsp butter
400 grams cooked shrimp
salt
freshly ground peppers
lemon juice
2 Tbsps chopped parsley
2 slices Whole Wheat Toast

Preparation steps

1.

Peel and finely chop the onion. Rinse the spinach, shake dry and chop.

Heat some butter and sweat the onion until soft. Add the spinach and sauté for 1-2 minutes. Stir in the shrimp, heat through and season with salt, pepper, lemon juice and parsley.

Cut the slices of toast lengthwise and briefly crisp up in the oven or in a toaster.

Serve topped with the shrimp and with mushy peas if desired.
