- 4 cloves garlic cloves (minced)
- 1 Tbsp Taco seasoning
- 2 Tbsps dark Agave syrup
- ⅜ cup apple cider vinegar
- 2 ½ cups chicken stock
- 26 ozs Pork tenderloin (trimmed and scored)
- 2 Limes
- 1 Red onion
- 1 large, ripe Avocado (pitted and chopped)

Preparation steps
1.
Heat the oil in a large casserole dish set over a moderate heat until hot. Add three cloves of minced garlic and fry for 1 minute.

Add the taco seasoning, stir well, and cook for a further minute. Add the agave, vinegar, and chicken stock.

Cook until simmering, stirring occasionally, and add the pork. Cover with a lid and cook on a low heat for 2 hours until the pork breaks apart.

Remove the pork from the sauce and pat dry. Shred between two forks and stir back into the sauce, seasoning with salt and pepper.
5.
Juice one lime into a bowl and add the remaining garlic and the avocado. Finely chop half the onion and some coriander, adding it to the bowl. Mash everything until smooth and season to taste.
6.
Cut the remaining lime into wedges and thinly slice the remaining onion. Serve the pork on lettuce leaves with guacamole, red onion, and lime wedges to garnish.
