200 grams Pastry flour
300 milliliters milk
2 eggs
salt
3 Tbsps olive oil
400 grams Spinach
1 onion
1 garlic clove
freshly ground peppers
Nutmeg
200 grams Mozzarella
50 grams freshly grated Hard cheese (such as pecorino)

Preparation steps

1.

For crepes, stir flour with milk until smooth and stir in eggs and season with a pinch of salt, to taste. Cover and set aside for about 20 minutes.

For the filling, blanch spinach briefly in boiling, salted water. Rinse spinach in cold water, drain and press out water and chop coarsely. Peel onion and garlic and finely dice and sauté until translucent in 1 tablespoon hot oil. Mix in spinach and remove from heat. Season with salt, pepper and nutmeg and allow to cool. Cut mozzarella into small cubes.

Preheat oven to broil.

For each crepe, heat a little olive oil in a pan and fry.

Place spinach filling in center of crepe and add mozzarella. Roll up crepes and place next to each other in greased baking dish with seam side facing down. Sprinkle with cheese and broil for about 10 minutes, watching carefully.

Serve crepes with salad, if desired.
