- For the crepes
- 200 milliliters milk
- 2 eggs
- salt
- 100 grams Pastry flour
- 2 Tbsps grated Parmesan
- butter (for frying)
- For the filling
- 1 shallot
- 1 garlic clove
- freshly ground pepper
- 1 pinch Nutmeg
- 250 grams Frozen spinach
- 200 grams Feta
- 50 grams coarsely chopped Walnut
- 1 Tbsp olive oil
- Walnut (for garnish)
Preparation steps

For the crepes, whisk the milk, egg, salt, flour and Parmesan together to form a dough. Allow to swell for 30 minutes. Put a little butter in a frying pan and fry eight crepes, in succession. Keep warm in the oven (75°C or approximately 175°F).

For the filling, peel the shallot and garlic and chop finely. Cook in hot oil, then add the spinach, cover and thaw over medium heat. Season with salt, pepper and nutmeg. Crumble in the feta and mix in the walnuts. Remove from heat and let rest, covered, for about 5 minutes.

Fill the crepes with the spinach mixture and roll each into a tube. Tie with kitchen string and garnish with walnut halves. Serve immediately.
