- 400 grams Oyster mushrooms
- 2 garlic cloves
- 6 Tomatoes
- 4 scallions
- 3 Tbsps Peanut oil
- light soy sauce
- Fish sauce
- freshly ground peppers
- Basil (for garnish)

Preparation steps

Wipe mushrooms thoroughly clean with paper towels and cut in slices as needed. Peel and slice garlic. Blanch tomatoes in boiling water for a few seconds, then rinse, peel, quarter and remove seeds. Rinse, trim and cut scallions diagonally into 3 cm long (approximately 1 inch long) pieces. Sauté mushrooms in hot oil, 1-2 minutes. Add scallions and garlic and sauté briefly. Stir in soy sauce and tomatoes and simmer 1-2 minutes. Season to taste with fish sauce and pepper.

Garnish with basil and serve with rice if desired.
