4 Sausage (Preferably Nuremberg Art)
8 medium potatoes (waxy)
1 large, white onion
8 slices Bacon
clarified butter
2 handfuls baby Spinach
1 tsp ground dried rosemary
salt
freshly ground peppers

Preparation steps

1.

Scrub potatoes and rinse, drain and pat dry and cut in half lengthwise. Place potato halves on an ungreased baking sheet. Season with salt, pepper and ground rosemary and bake in preheated oven at 180°C (approximately 350°F) for about 30-35 minutes until tender.

Peel onion and cut into slices. Rinse spinach and spin dry.

Cook bacon in a large skillet until crispy and lift bacon from pan with a slotted spoon and drain on paper towels. Heat 1 tablespoon butter in remaining bacon fat in pan and fry onions over medium heat. Add spinach and stir. Add cooked potato halves to pan and toss briefly and stir in cooked bacon.

In a separate pan, heat butter and fry sausage rings in portions. Place sausage rings on plate and arrange potato mixture in the middle and serve immediately.
