6 ⅔ cups floury potatoes (peeled and roughly chopped)
½ cup Fat
salt

Preparation steps

1.
Preheat the oven to 190°C (170° fan) | 375F | gas 5.
2.
Par-boil the potatoes in a large saucepan of salted, boiling water for 10 minutes. Drain well and leave to steam off.
3.
Place the fat in a large roasting tray and place in the oven for 10 minutes.
4.
Carefully remove the tray of hot fat from the oven and add the potatoes, stirring to coat. Season with salt and pepper.
5.
Return the tray to the oven for 45 - 55 minutes, turning occasionally, until golden all over.
6.
Remove from the oven and leave to cool briefly before serving.
