- 6 small, red onions
- 6 garlic cloves
- 1 kilogram waxy potatoes
- 50 milliliters olive oil
- salt
- freshly ground peppers
- 1 splash lemon juice
- 1 pinch Caraway
- coarse Sea salt
Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Peel the onions and cut into wedges. Peel and slice the garlic. Thoroughly rinse the potatoes, and trim away any bad spots. Cut into 1/2 cm (approximately 1/4 inch) thick slices. Mix the potatoes, onions, and garlic in a bowl. Mix in the oil, then season to taste with salt, pepper, caraway seed, and lemon juice. Line two baking sheets with parchment paper, then arrange the potatoes on the baking sheets. Place in the oven and roast for 40 minutes. Stir 2-3 minutes during the cook time, to ensure that all the potatoes crisp evenly. Check with a fork to see if the potatoes are cooked all the way through.
