- 4 stalks white Asparagus (peeled and sliced lengthways into fine strips)
- ⅔ cup peas
- 1 Grapefruit (filleted and chopped, juice reserved)
- 1 ⅓ cups Salmon fillet (cut into bite-sized pieces)
- 1 tsp brown sugar
- 4 Tbsps olive oil
- mint (to garnish)

Preparation steps
1.
Blanch the asparagus and peas in salted water for around 4 minutes. Drain well.
2.
Drizzle half of the grapefruit juice over the salmon, season with salt and leave for 10 minutes to marinate.
3.
Mix the rest of the juice with the sugar, grapefruit pieces and olive oil and season to taste with salt and ground black pepper. Mix with the asparagus and peas and arrange on plates. Add the salmon, garnish with mint and serve as a small appetiser.
