- 10 cups Penne
- 12 slices Parma ham
- 1 Leek (cut into thin rings)
- 1 clove garlic cloves (finely chopped)
- 1 Tbsp olive oil
- ⅞ cup vegetable stock
- ⅞ cup milk
- 2 cups peas (frozen)
- Nutmeg (freshly grated)
- 2 sprigs fresh mint (leaves finely sliced)
Preparation steps

Preheat the oven to 160°C (140°C in a fan oven), 325°F, gas 3 and line a baking tray with greaseproof paper.

Cook the pasta in boiling salted water until al dente.

Place the ham on the prepared baking tray and roast the ham for around 12-14 minutes until crispy.
4.
Fry the leek and the garlic in a pan in hot oil. Add the stock and the milk and simmer for around 10 minutes. Add the peas, season with salt, ground black pepper and nutmeg and simmer for another 5 minutes.
5.
Drain the pasta and stir into the sauce along with the mint. Arrange on plate and serve topped with the crispy ham.
