- 2 cups Spinach (washed and dried)
- ¾ cup Oyster mushrooms (finely sliced)
- 1 shallot (finely sliced)
- ½ cup Smoked salmon (cut into strips)
- salt
- Black pepper

Preparation steps
1.
Arrange the spinach between 2 serving bowls. Sprinkle the sliced shallot on top.

Dress with the olive oil and a little seasoning.
3.
Sprinkle over the sliced mushrooms and arrange the smoked salmon strips evenly on top. Serve immediately.
