1.333 cups chopped Rose hip (seeds removed)
2 ½ cups Cider vinegar
1.333 cups Golden raisins
24 ozs Apple (peeled and chopped)
2 tsps ground ginger
½ tsp cayenne pepper
½ tsp ground cloves
1 clove garlic cloves (finely chopped)
1 cup sugar
2 Tbsps lemon juice
2 Tbsps Orange juice
2 tsps grated Orange zest

Preparation steps

1.
Put the rose hips and vinegar into a bowl. Mix well, cover and leave to stand overnight.
2.
Put the mixture into a large pan with the remaining ingredients and heat slowly until the sugar has dissolved.
3.
Bring to a boil and cook until the mixture is thick and pulpy.
4.
Spoon into hot sterilised jars, cover, seal and label.
