- 1.333 cups chopped Rose hip (seeds removed)
- 2 ½ cups Cider vinegar
- 1.333 cups Golden raisins
- 24 ozs Apple (peeled and chopped)
- 2 tsps ground ginger
- ½ tsp cayenne pepper
- ½ tsp ground cloves
- 1 clove garlic cloves (finely chopped)
- 1 cup sugar
- 2 Tbsps lemon juice
- 2 Tbsps Orange juice
- 2 tsps grated Orange zest
Preparation steps
1.
Put the rose hips and vinegar into a bowl. Mix well, cover and leave to stand overnight.
2.
Put the mixture into a large pan with the remaining ingredients and heat slowly until the sugar has dissolved.
3.
Bring to a boil and cook until the mixture is thick and pulpy.
4.
Spoon into hot sterilised jars, cover, seal and label.
