200 milliliters dry Sparkling wine
2 Tbsps Pastry flour
600 grams Pollock
2 Tbsps butter (for cooking)

Preparation steps

1.

Peel the onion, chop and saute briefly in butter in a pot. Add the sauerkraut, season with salt and pepper, stir in the honey, bay leaf and sparkling water and bring to a boil. Lower the heat, cover and simmer for approximately 30 minutes. Rinse and halve the grapes and stir into the sauerkraut.

Rinse the fish fillets, pat dry, cut into serving-sized pieces, season with salt and pepper and coat with flour.

3.

Heat 2 tablespoons of butter in a large non-stick pan and fry the fish pieces on each side for about 3 minutes.

4.

Arrange the fish and sauerkraut on plates and serve alongside mashed potatoes.
