5 ½ ozs Apple juice

1 Radicchio
4 ozs Cheddar cheese
1 Tbsp lemon juice

3 Tbsps walnut kernels

Preparation steps

1.

Wash grapes and blueberries, and put them whole in a large glass jar (500 ml/16 oz). Peel ginger and cut into slices. Peel garlic and cut in half if necessary. Break cinnamon stick into pieces.

Boil sugar with vinegar and 2.5 ounces of water. Add juice, ginger, garlic, cinnamon, orange peel, and mustard seeds and boil again. Remove from heat and pour mixture over fruit. Seal airtight and allow to infuse in refrigerator or cool cupboard for at least 2 days.

Then drain the fruit and remove 4 tablespoons of the liquid.

Clean radicchio, wash, spin dry and arrange on plates with cheddar in pieces. Add the fruit on top.

Season fruit dressing with lemon juice, drained liquid from fruit, salt, and pepper. Whisk in oil and drizzle dressing over lettuce and cheese.

6.

Lightly chop walnuts, cut cress from the bed and sprinkle both over the salad.
