- 1 ¾ ozs dried Cherries
- 4 Tbsps apple cider vinegar
- 4 Tbsps flaxseed oil
- 2 Tbsps lemon juice
- salt
- peppers
- 28 ozs Red cabbage
- 14 ozs Radicchio
- 1 Apple
- 1 red onion
- 1 handful Fresh herbs (dill, parsley)
- 2 Tbsps nut kernels (such as walnuts, almonds)
Preparation steps
For the dressing, chop the cherries and mix with vinegar, oil and lemon juice, season with salt and pepper.
Clean red cabbage and radicchio, wash, halve, cut out stalks, cut or slice cabbage and radicchio into fine strips.
Wash, quarter, core and finely slice the apple. Peel the onion and cut into strips.
Wash herbs, shake dry, and pluck leaves; set aside some dill for garnish, and chop the rest.
Mix herbs in a bowl with red cabbage, radicchio, apple and onions with half of the dressing. Arrange on plates or a large platter and drizzle with remaining dressing.
Chop nuts, sprinkle over salad, and garnish with remaining dill.
