- 1 kilogram Eggplant
- salt
- 600 milliliters olive oil
- 2 Tbsps mixed peppercorns
- 6 fresh bay leaves
- 6 small chili peppers (dried)

Preparation steps
1.
Rinse the eggplant, trim and cut crosswise into slices. Sprinkle with salt and set aside for about 10 minutes. Pat dry.
2.
Working in batches, sauté the eggplant in hot olive oil and distribute between glass jars, sprinkling with peppercorns, bay leaves and chiles between layers.
3.
Fill with olive oil to cover. Close tightly. Keep stored in a cool and dark place.
