400 grams potatoes
1 onion
3 Tbsps butter
200 grams Pastry flour
70 milliliters milk

Preparation steps

For the waffles: Boil the potatoes until soft in salted water. Peel onions, half and cut into small cubes, sauté until golden brown in butter. Peel the potatoes, mash and season with salt, pepper, and nutmeg. Mix the mashed potatoes, the onions, flour, milk, and eggs.

Oil the waffle iron and place a ball of potato dough in the middle. Press and cook as a waffle.

For the mustard sauce: Mix the mustard with honey, dill, and oil.

Serve the waffles on a plate topped with smoked salmon. Serve to taste with dill leaves. Accompany with the mustard sauce.
