1 kilogram floury potatoes
3 eggs
5 Tbsps Pastry flour

Preparation steps

Rinse, peel and shred potatoes but not too finely. Place on a clean kitchen towel and vigorously wring. Drain and let stand for several minutes. Stir in eggs and flour and season with salt, pepper and nutmeg.

Heat 3-4 tablespoons of oil in a pan and add batter a tablespoon at a time. Slightly flatten each pancake and cook until golden brown on both sides over medium heat. Add more oil as needed. Drain on paper towels.

For the apple compote, peel apples, cut in half, remove seeds and cut into quarters. Place in 50 ml (approximately 1/4 cup) of water and 1 tablespoon powdered sugar in a saucepan. Cover and simmer over low heat for 5-6 minutes. Mash apples with a fork and cool. Serve warm pancakes with cold apple compote.
