3 Tbsps sunflower oil

Preparation steps

Preheat the oven to 160°C (approximately 320°F).

Rinse the lamb and pat dry. Heat the oil in a roasting pan. Season with lamb with salt and pepper and add the lamb. Roast in the oven for 15 minutes. Remove the lamb. Drizzle with honey and sprinkle with pistachios, pressing to adhere. Increase the oven temperature to 220°C (approximately 425°F) and roast the lamb for an additional 5-10 minutes, or until desired doneness. Remove the lamb from the oven and cover with foil to rest. To serve, slice the lamb chops. Serve garnished with pomegranate seeds and roasted potatoes.
