Put the egg whites into a bowl with the sugar, ground almonds and grated lemon peel and whisk with an electric hand mixer for about 15 minutes, until the mixture is thick and firm.
Form the mixture into approximately 20 balls and roll in pine nuts.
Place a little distance apart on a baking tray lined with baking parchment and bake at a moderate temperature until very lightly browned.
Roll in sugar and leave to cool. Keep in an airtight tin and serve with coffee.
