Pine Nut Cookies
Mix almonds, pine nuts, sugar, salt and lemon zest. Whisk egg whites and mix thoroughly into the mixture.
Preheat oven to 180°C (approximately 350°F). Scoop small heaps of mixture on a baking sheet lined with parchment paper. Leave some distance, because the cookies spread when baking.
Top each cookie with 1-2 pine nuts. Bake 8-10 minutes. Let cool briefly on the sheet, then remove.
