Pickled Pearl Onions
Dissolve the salt in the water and soak the onions in the water overnight, using a large plate to keep the onions submerged.
Combine the vinegar, sugar and spices in a large saucepan and boil for about 5 minutes. Scoop the spices out with a slotted spoon. Drain the onions, add to the saucepan and simmer for about 4 minutes. Transfer the onions to clean, glass jars and cover completely with the vinegar. Seal tightly, turn upside down and allow to cool completely.
