- 3 ½ ozs fatty Bacon (diced)
- 1 onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 14 ozs peas
- 6 Tomatoes (skinned and diced)
- salt
- freshly ground Black pepper
- 1 egg (separated)
- 2 tsps milk
- 16 ozs Puff pastry
- flour (for dusting)
- 3 Tbsps Caraway

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line 2 large baking trays with non-stick baking paper.
2.
Heat a frying pan and cook the bacon until the fat runs. Add the onion and garlic and cook gently until softened.
3.
Add the peas and tomatoes and season to taste with salt and pepper. Cover and simmer for 3-4 minutes over a medium heat. Remove from the heat.
4.
Roll out the pastry on a floured surface and cut out about 20 rounds, about 8cm|3" in diameter.
5.
Spoon the filling onto one half of each round and and brush the edges with egg white. Fold over the other half of each round and seal the edges firmly. Place on the baking trays.
6.
Beat the egg yolk with the milk and brush over the pastry. Sprinkle with caraway seeds.
7.
Bake for20-25 minutes until golden brown. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
