2 shallots
2 garlic cloves
80 grams Smoked bacon (in slices)
2 Tbsps grapeseed oil
1 splash dry white wine
1 lemon
2 sprigs fresh mint
salt

Preparation steps

Rinse the peas. Cook for about 6 minutes in boiling salted water. Peel the shallots and the garlic. Cut the shallots into rings, and finely chop the garlic. Cut the bacon into small cubes. Sauté bacon with the shallots and garlic in hot oil for 3-4 minutes.

Add the white wine and remove from the heat. Zest the lemon and juice the lemon into the pan.

Mix the bacon and shallots with the beans. Season with salt and pepper. Let sit about 30 minutes, then season again.

To serve: Garnish with mint.
