6 Tbsps olive oil
1 tsp red pepper flakes

Preparation steps

1.

Wash potatoes and cook in boiling salted water until tender, 20 minutes. Then drain, rinse, and drain. At the same time, peel and finely dice the garlic. Put 5 Tablespoons of oil in a small bowl and add chili pepper flakes.

Cover baking tray with baking/parchment paper and brush with the remaining oil. Spread potatoes on the baking sheet and carefully flatten them (small potatoes can be peeled beforehand).

Salt and pepper the potatoes, drizzle with chili garlic oil, and grate Parmesan cheese over them. Bake in a preheated oven at 200 °C / 400 °F for about 25 minutes until golden brown.

Wash parsley, shake dry, and finely chop leaves. Remove potatoes, sprinkle with parsley, and serve with remaining chili garlic oil.
