juiced and zested Limes (from four limes)
1 Tbsp Fish sauce
1 tsp sugar
8 Scallop (with shells)
3 Tbsps olive oil
2 cloves garlic cloves (finely chopped)
1 red chili pepper (seeds removed and finely chopped)
8 large shrimp (tails and black veins removed)

Preparation steps

1.
Mix the lime juice and zest with the fish sauce and sugar and set aside.
2.
Cut the scallops away from the shell, discarding the corals. Rinse the scallops and shells and pat dry with kitchen paper. Slice each scallop in half horizontally and set aside.
3.
Heat the oil in a skillet and gently fry the garlic and chile until just starting to soften. Remove the garlic and chile with a slotted spoon and add to the lime juice mixture.
4.
Place the scallops cut side down in the skillet and cook for 1 minute on each side. Remove from the skillet and add to the lime juice mixture.
5.
Heat the skillet again, quickly fry the shrimps until cooked through and add to the lime and scallop mix.
6.
Place two halves of a scallop on each shell along with one shrimp and pour over the lime mixture.
