1 Tbsp chopped Tarragon
2 garlic cloves

1 generous pinch spicy ground paprika
1 generous pinch Curry powder
1 tsp whole grain Mustard
1 Tbsp Madeira Wine
1 Tbsp Cognac
6 Tbsps olive oil
1 splash Worcestershire sauce
4 Steak fillet (each about 180 g)

Preparation steps

1.

Preheat a convection oven to 100°C (approximately 215°F).

Rinse and dry the tarragon, then finely chop. Peel and finely chop the garlic cloves. Mix with the curry powder, paprika, mustard, madeira, cognac, oil, and worcestershire sauce. Season to taste with salt and pepper.

Rinse the beef, pat dry, and cut into 5-7 cm (approximately 2- 2 3/4 inch) thick slices. Tie with kitchen twine, brush with the marinade, and let rest for 30 minutes.

Cook in a hot grill pan for 3-7 minutes, depending on how well you like your steak cooked (medium or well done). Brush again with the marinade. Let rest in the oven for 10 minutes.

5.

Serve with a fresh salad and baguette.
