2 Red mullet fillets (each 600 grams, ready to cook)
2 large Banana leaf (Asian grocery store)
3 red Pepperoncini
2 garlic cloves
2 Tbsps Fish sauce
1 Tbsp sugar
4 Tbsps Lime juice
4 Tbsps vegetable oil
freshly ground pepper
1 Lime

Preparation steps

1.

Rinse red mullet and pat dry. Soak banana leaves in water.

Rinse chile peppers and dice finely. Peel garlic and chop coarsely. Combine fish sauce with lime juice, oil, chile peppers and garlic and mash coarsely. Season with pepper.

Brush red mullet with marinade. Rinse lime with hot water, pat dry and cut into slices. Pluck cilantro leaves from stems. Place each red mullet on a banana leaf, cover with slices of lime and cilantro. Pour over remaining marinade. Wrap up banana leaves and secure with wooden skewers. Marinate for 1 hour in the refrigerator.

Grill red mullet in banana leaves for about 15-20 minutes. Remove from grill and serve.
