- 400 grams Linguine
- olive oil (cold pressed)
- salt
- freshly ground peppers
- 3 Bell pepper (2 red, 1 yellow)
- 1 small Broccoli
- 3 garlic cloves (finely chopped)
- 1 Zucchini
- Parmesan
Preparation steps

Rinse peppers, cut in half, remove seeds and ribs and cut lengthwise into strips.

Rinse then broccoli and cut into florets. Blanch broccoli florets in boiling salted water for 4 minutes. Drain well. Rinse and trim the zucchini, cut into quarters lengthwise and cut into small pieces.

Heat 4 tablespoons oil in a pan and saute the peppers along with the zucchini over high heat for 1 minute. Reduce the heat, add 50 ml (approximately 1/4 cup) of water and the garlic. Cover and cook over medium heat for about 8-10 minutes. Stir again. Add broccoli and season with salt and pepper.

Meanwhile, cook the pasta in plenty of salted water until al dente. Mix pasta with the vegetables, top with freshly grated Parmesan and serve immediately.
