2 Tbsps butter
1 bunch scallions (rinsed; trimmed and sliced)
2 ribs Celery (rinsed and sliced)
1 cup sliced Mushrooms
8 carrots (peeled; trimmed and cut into 3-inch / 8 cm pieces)
4 medium potatoes (peeled and cubed)
3 Tbsps all-purpose flour
3 cups chicken stock
¼ tsp dried marjoram
¼ cup finely chopped parsley
2 boneless, skinless, halved turkey breasts (sliced)

Preparation steps

Melt the butter in a large pot set over medium heat. Place onions in the pot and cook until tender. Stir in celery, mushrooms and carrots, and cook for about 5 minutes. Stir in the potatoes and flour. Pour in the chicken stock, and season soup with marjoram and parsley. Place sliced turkey in the pot, and bring to a boil. Reduce heat to low, cover, and simmer 30 minute, or until the vegetables are tender and the turkey is cooked through.
