2 eggs (beaten)
3 very ripe Banana (mashed)
2 cups all-purpose flour
½ tsp salt
¾ cup sugar
1 tsp baking soda
1 firm Banana

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 10 muffin tins.
2.
Beat together the eggs and ripe bananas.
3.
Mix together the flour, salt, sugar and bicarbonate of soda inn a mixing bowl. Stir in the egg mixture and lightly mix, until just combined.
4.
Slice the firm banana.
5.
Spoon into the paper cases and press 1-2 banana slices into each.
6.
Bake for 20-25 minutes until golden and risen. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
